Sugar Cookies

52 Weeks of Cookies:  Week 24

 Not sure where this recipe came from... I've had it written down for years so now I'm just going to write it down on here for everyone to have.

Warning:  In case you couldn't tell with the 5 cups of flour... it makes a rather large batch.  You might want to cut it in half (or fourths)

Ingredients:

1 1/2 cups butter, softened
2 cups white sugar
4 eggs
1 tsp vanilla extract
5 cups all purpose flour
2 tsp baking powder
1 tsp salt

Directions:

In a large bowl cream together the butter and sugar until smooth.  Beat in eggs and vanilla.  Stir in the flour, baking powder, and salt.  Cover and chill dough for at least one hour (I did overnight).

Preheat oven to 400 degrees Fahrenheit

Roll our dough on floured surface to 1/4 - 1/2 inch thick and cut into shapes.  Place cookies on ungreased cookie sheet.

Bake 6-8 minutes and cool completely before icing.

Icing

Ingredients:

4 cups confectioners sugar
1/2 cup shortening
5 tablespoons milk
1 tsp vanilla

Directions:

In a large bowl, cream together the sugar and shortening until smooth.  Gradually add milk and vanilla until smooth and stiff.

Butter Icing

Ingredients:

1 1/2 cups confectioners sugar
3 tablespoons butter, soft
1tsp vanilla
1 tablespoon milk

Directions:

Combine sugar, butter, vanilla, and milk until creamy.  Thin with a few more drops of milk (if necessary)

Anyways, I think sugar cookies are a must every Christmas (even though I wasn't feeling much like decorating and therefore just made stars with sprinkles).  So, I give these 10/10.  Enjoy!
