Apple Buns

In case you haven't heard we have an apple tree.  Which means... we've got a fridge full of apples!  We gave a bunch to John's mom shortly before we moved in and she made us some wonderful apple crisp out of them but we still had a full grocery bag left at our house afterwards... so if you are like us... with an abundance of apples at this time of year... might I suggest apple buns!


The recipe linked above recommends resisting the urge to add sugar or cinnamon to your apple mix.  I've made these twice now (the first time was a number of years ago though) but the first time I did add the sugar and cinnamon.  This time John told me to make it liked the recipe suggested... he agrees now that they could be even tastier with the addition of a little cinnamon and sugar for next year though.

We ended up bringing a dozen of our apple buns to our bible study and they were a big hit... we ended up leaving the extras with the host but I think there was only about 2 or 3 left in the end.

We've been cooking up other stuff from our garden already... here is our salsa.

Top 20 Cookies from the Year

I said about a month ago that I would compile a list of my top cookies that I made during the last year .. after reviewing the candidates I decided that the list had to be 25 cookies long (and let me tell you narrowing it down from 52 Weeks of Cookies to just 25 was kind of hard.  But here we go (in no particular order

5.  Graham Cracker Cookies 
(I'm going to make these again soon to bring to the lake!)
8.  Chocolate Chocolate Chip Cookies
(I might make these again this summer too)
9.  Banana Cookies
(these are next on my list to make and bring to the lake)
25.  Birthday Cake Cookies (because... special occasions)

I've noticed now that I've compiled my list that a peanut butter cookie is noticeably absent from the list... so.. do you have a go to peanut butter cookie recipe?  Because I might need to try it!

Chocolate Chip Cookies With Frosting

52 Weeks of Cookies:  Week 53


That's right folks... I've got one (and only one) bonus week for all of you!

We've got so much to be celebrating...

Schools out for summer
Canada Day
My birthday
Wedding Planning is still happening
Oh, and I've got relatives in from The States.

This weeks recipe comes from Cookies and Cups

So, it's everyone's two favourite things.. chocolate chip cookies and frosting... and when you put 2 things that you really like together it's supposed to make something REALLY tastey... right?  Just watch Full House Season 5 Episode 25 for confirmation of this.

Anyways, obviously when you pair tuna with ice cream it may not turn out so well and I'm assuming frosting and cookies hasn't turned out nearly as bad as that did.... but still not so great.

Am I still bringing the cookies to the lake next weekend?  

Of course!

Cookie Dough Oreo Cookies

52 Weeks of Cookies:  Week 52


Well folks, this is it... I've officially made a different type of cookie every week for an entire year.  Not going to lie... sometimes I definitely didn't feel like doing it (and sometimes I made 2 cookies in one week but only posted 1 type per week).  There's also a good chance I've put on some weight from this endevour.  I'm pretty happy that I don't need to be making a new type of cookie every week from here on out and can stick to some that will freeze well for a little while (so that I don't constantly have cookies on the counter or in the freezer.  In the next week or so I'll be compliling my list of cookies that I will make again (I'll try to keep it to 20 cookies or less.. but I can't make any promises because if I remember correctly there was a number of delightful cookies that I ate this year!).

Anyways, this isn't my first time making Oreo cookies... Only a few weeks ago I made some Ultimate Oreo Cookies and I've also made some Carrot Cheesecake Cookies, some Mint Sandwich Cookies and if we are just going to go ahead and count all sandwich like cookies I also made some Jam Jam Cookies.

This weeks cookies come to your from Chef in Training and they will not disappoint.

I didn't change the recipe on this one.  In fact, I was actually going to make a full recipe (which I haven't done in a while) but then realized I still had a half box of devils food cake in my cupboard from another cookie recipe and so decided to just finish that off.

My verdict:  9/10.  They are really tasty but next time I think I would make half the amount of filling that's required... it made a lot and was pretty sweet... I just think it's not necessary to have that much (but a child would probably disagree).

Last week I made some Turtle Twix Cookies that were also quite good.

Turtle Twix Cookies

52 Weeks of Cookies:  Week 51


This is it folks... just one more week and I have officially made a new cookie every week for an entire year.

I've made Turtle Cookies before and I've made Twix Cookies before but never have I ever combined the 2... until this week that is.

These ones come to you from The Chunky Chef and they won't disappoint!

I didn't change much about these (in fact I even made the full recipe because I was bringing them to a get together).  But what I did change was I didn't add the optional salt to the caramel (ok, this is because I forgot about it) and I also almost forgot to add the pecans which is why my pecans are on top... I wasn't trying to be different or anything.

I was pretty surprised that most of these cookies were still in the container after the get together.. turns out one of the newbies to the group has a severe nut allergy... so I'm going to go ahead and blame it on that and not because these don't taste delicious!
If you also have a friend with a severe nut allergy the recipe does say how to make them just twix cookies and it's pretty easy... you just leave the pecans off of them.

I give these cookies a 10/10... looks like I'm saving all the great ones for the end!

Pecan Pie Cookies

52 Weeks of Cookies:  Week 50


You guys!  These ones taste really good!  And despite what you may think with them having the word pie in the title they are pretty easy to make!  

You can find the recipe for these cookies on Celebration Generation and I didn't change a single thing up from the recipe except that I didn't include the option spices.

What do I like about them?  The cookie part is delicious and it tastes like how I remember a pecan pie to taste (although it has been at least a couple of years I feel since I've had an actual pecan pie).

Last week I made some cookies that would have been a better choice to make this week given how hot it has gotten... Chocolate Snickers Cookies that don't require any baking!

Chocolate Snickers Cookies

52 Weeks of Cookies:  Week 49

Alright folks, I lost my edge on being a full week ahead on these posts and quickly threw these cookies together at 10pm last night (I got distracted looking up information on wedding favors, centerpieces, videographers, and photographers... yes I looked into all of that!).  I already knew I was making these ones because I was fresh out of eggs but it turns out I was also practically fresh out of peanut butter.  So... I only did 1/4 of the recipe... which may have led to some errors in ingredient amounts.

Anyways, I found this recipe on Pinch of Yum.

This isn't my first time adding Snickers into a cookie I've done it with my Snickers Cheesecake Cookies (and these ones were pretty good so you might want to check them out)

Other than attempting to quarter the recipe the only other thing I changed was that I didn't have dark chocolate cocoa powder... I didn't even know this was a thing and I just used regular cocoa powder. But since I quartered the recipe that probably means I  pretty well changed everything!

Did they turn out?  They did!  I have yet to properly sample them because of how late I made them (and ok, I had already cut up Snickers for half the recipe and then when I found out I could eat half of what I chopped up I probably nearly ate the full half).  Here are my thoughts without properly tasting them (and I promise I'll taste them in a few hours hopefully and I'll come back and change all of this)... they seem kind of dry.  I was expecting them to be a little more wet.. especially since it said you could add extra oats if need be.  The scent when you add the boiling chocolate sauce to the oats and peanut butter is delightful!  AND these are so simple to make.. seriously they definitely didn't take me more than 10 minutes to put together and I was quartering the recipe folks!



Update:  I had a couple of friends over and these all got gobbled up so I guess they were pretty good (or we were just really hungry!).  I thought they were a little sweet though.. if I made them again I'm not sure I would include the Snickers.  I'll give them an 8/10

Cinnamon Bun Cookies

52 Weeks of Cookies:  Week 48


Most (if not all) of us probably enjoy a good cinnamon bun every so often... so why aren't we all turning them into cookie form?  I'm not sure but that's what I did this week with the help of Picky Palate.

I didn't change much about this recipe other than the fact that I halved it.  If I made it again and didn't wan to commit to a whole recipe I think I would third it.  Yes, thirding this recipe would be easier than halving.  The reason?  When it comes to rolling out the dough stuff just gets complicated with the instructions!  Here's what I decided to do:  Make one giant roll and cut it into pieces from there.  It didn't work out too great... I mean it wasn't a complete fail but it could have been done better.  

My dough was also quite sticky... usually sugar cookie dough is dryer because you are cutting out shapes with cookie cutters... I just can't imagine being able to do that with this sugar cookie recipe.  Maybe I messed up somewhere while halving the recipe though... it could definitely be my fault!  But, because I'm not sure next time I would use my Sugar Cookie recipe (just to be on the safe side).

John and I have been enjoying these while we go out in search of the perfect venue.  We should be deciding today what venue is perfect for us... so stay tuned for that!  John thought that they were quite good and I would have to agree.  I give them a 9/10... because there is room for improvement.

Ultimate Oreo Cookies

52 Weeks of Cookies:  Week 47


It's Oreo's within homemade Oreo Cookies or no big deal just an Ultimate Oreo Cookie.  I found this recipe on My Baking Addiction.

This wasn't my first attempt at making these lovely sandwich style of cookies... I've made Jam Jams, Carrot Cheesecake Cookies, and Mint Sandwich Cookies (but I think these Ultimate Oreo Cookies are the best one yet)

First off what I changed.  

... Nothing

Now that we got that out of the way here are a few things that I noticed.  Mine didn't turn out as nice looking as the picture *wah*wah*wah* no surprise there but my cookies aren't entering no beauty contests so all that really matters is what they taste like..;. because I'm going to eat them instead of putting them on display.

So they tasted fantastic.  Like REALLY good.  Like I would easily make these again kind of good.
10/10 kind of good.

Twix Cookies

52 Weeks of Cookies:  Week 46


I think Twix chocolate bars are probably one of my favourites so I was expecting this recipe by Chef in Training to be just as delightful.

These aren't the first chocolate bar related cookie I've made.  A looong time ago I made some Turtle Cookies that I really liked too.

The only thing I changed up in this recipe is I took a walk to the local Dollarama to buy some bags of caramels.  Why Dollarama?  NO WHERE SELLS THEM!  Seriously, is it just me or have we been on some kind of caramel drought for probably the last 20 years in Canada?  Bulk Barn probably has BUT caramels get hard when they just sit out for long periods of time so I didn't want to go that route.  ANYWHO, these ones were not Kraft and I certainly didn't buy no 5lb log of caramel to melt down!  That just seems crazy.  So, no instructions for how to melt the caramels were on the bag so here's what I did.  I keep some old (frozen) buttermilk in the freezer and I took a piece of that out and melted it down into a bowl of caramels (maybe about 20 of them for half the recipe).  It melted just fine in the microwave on a low setting for 30 or so seconds at a time until fully melted.  

These cookies surprised me a little... mostly because I have always been under the impression that shortbread would be a hard thing to make... but this one was a snap.  So if you love shortbread.... you should definitely check out this recipe!

My verdict?  They have the potential to be good... I just wish my caramel wasn't so hard but chewy instead.  I'm assuming it's because I'm keeping these cookies in the fridge... because the caramel does soften up while I'm eating it... maybe it was my melting technique that is causing this.  

Anyways, other than the hard caramel issue these are pretty good 8/10

Graham Cracker Cookies

52 Weeks of Cookies:  Week 45

Attention everyone... I'm officially back to being ahead with the cookie recipes!... which is probably why I'm managing to post them on Saturday's.  So by the time this gets posted these cookies will have all been gobbled up.

I've also officially picked the last few cookies for my year of cookies... there may be a couple extras.

If you've been around for a while you may recall that this is not my first attempt at making cookies using graham cracker crumbs... I did it once before when I made some S'more Cookies.  Where I mentioned that they would be great without all the extra s'more like toppings... which is almost what these cookies are.

Anyways, this weeks cookies come from Buns in my Oven and in my opinion are super easy to make.  AND.. if I'm allowed to have a second opinion on these cookies I would say that if you made them with mini chocolate chips they would look just like Chip Ahoy Cookies (only these ones are better).

I followed the directions on these and my only issue with them is that they taste a little too salty in my opinion...  BUT that could be a baker's error... I almost always halve the recipe and there could be a chance that I forgot to halve the amount of salt on these... I mean I don't think I did and for that reason I'll add less next time I make these but I may have.

I left them on the pan to firm up... they were definitely still fairly soft when I took them out of the oven and needed to cool on the pan so that they wouldn't fall apart.



My verdict... 9/10.  They were pretty yummy and I'll be sure to make them again!

Last week I made some Fudge Crinkle Cookies that were also easy to make (and tasty too).

Fudge Crinkle Cookies

52 Weeks of Cookies:  Week 44


These ones are super simple to make and will only take you about 15 minutes (probably) from when you start making them to when they come out of the oven.  I found the recipe on Food.com but I think there are many MANY other versions of this... my mom made one called Zebra Cookies that was just like these.

I made these exactly as the recipe said to... but a word of warning... just read all her tips because I didn't and I'm wondering if using the last one where she says to "dry out" the cookies a little before putting the icing sugar on them would actually help to not have it get so absorbed into the cookie.  I knew this would happen from when I made my Chocolate Coffee Cookies so I rolled them all into balls and then rolled them in the icing sugar and then quickly gave them another run through the icing sugar just before popping them in the oven.... either I over oiled (which is possible because I estimated what about half the cake mix package would be) or I needed more wait time after I rolled them all into balls.  Ah well.. it doesn't affect the taste!

Speaking of taste... if you are looking for a cookie that tastes like a brownie then you'll enjoy these!  I'm giving them a 10/10 because they are easy to make and taste great (one day I'll figure out this icing sugar secret to make them look good too).

Peanut Butter Cookies

52 Weeks of Cookies:  Week 43


We are down to our last few cookie recipes here folks!

I figured it was time I go back and try some old favourites for a bit (or at least this week).  So here is my second attempt at Peanut Butter Cookies... using an old recipe that I likely wrote down from somewhere online but I have no idea where.

If you missed it here was my first attempt at a peanut butter cookie recipe... I was drawn in by the lack of ingredients... when/if you make them be sure to have lots of milk on hand... you'll need it!

So I already knew these ones were good... here's the recipe

Ingredients:

1/2 cup butter
3/4 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
2 tsp vanilla
1 1/2 cups flour
1/4 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder



Directions:

Preheat oven to 350

Mix flour, salt, baking powder, and baking soda in a small bowl.

Beat butter, peanut butter, and sugars until light and fluffy.

Add eggs and vanilla to butter mixture and beat some more.

Add flour mixture to butter mixture and mix until smooth.

Bake for 10-12 minutes in preheated oven.


I brought these along with the Samoa Cookies I made last week to my Bible Study group.... no one complained!

Samoa Cookies

52 Weeks of Cookies:  Week 42


I found this recipe on Just a Taste

Warning, these cookies will take a while to make.  Make them on a day you don't have much going on!

The alterations I made?  Not many... obviously I did not choose to go with the doughnut look for these cookies... I just figured using circles WITHOUT the middle cut out would be faster and easier... also, I don't have any circular cookie cutters so there's that (I just use a small cup to cut out the circles).

I didn't have any dark chocolate so I used semi sweet instead.

One word of warning that the recipe actually states as well.  Coconut will burn pretty quickly... we might all know this but also remember that the parchment paper that you put the coconut on will also burn if it touches the element in your oven.  Yes, I had a small kitchen fire while making these.  No the smoke detector didn't go off... it was pretty small and I got it put out right away.  What happened?  I was making toasting my coconut in the toaster oven instead of the oven so the pan is significantly smaller and I didn't bother to cut the parchment paper to fit it properly.  The first few minutes it was all fine.  I took the pan out of the toaster oven and mixed the coconut and then put the pan in the other way... which is when the parchment paper caught fire.  I quickly put just that area under the tap and leaned the pan that way so that the water wouldn't get all over the pan... and hardly any coconut was lost in the process.  After this happened I decided my coconut was toasted enough though.

A few notes... 

The bit of caramel you spread on your cookies before putting the caramel and coconut mixture on is important.  It holds the coconut onto the cookie.  I ran out of caramel for one cookie so left it off... and the coconut kept sliding off of the cookie.  So don't think you can get away with skipping that step!

The caramel coconut mixture will thicken up but won't harden up so that you can't manipulate it.  I found that spooning a bit on the cookies and leaving it for a few minutes and then going back and smoothing it out on the cookies worked much better than trying to smooth it around while it was still warm... it just stuck to everything then!

When I put the chocolate on the bottom of the cookies I placed them upside down on the tray (caramel coconut side down) and then put them in the fridge for a bit.  This hardened up the chocolate so that it wouldn't all come off on the pan.

By this point I was nearly out of chocolate and it was getting kind of late so I didn't care about what the tops looked like (but I'm not sure I would have cared much had it not been late either)

I give these cookies a 9/10.  They are scrumptious but they take a loooong time to make.

Chocolate Chip Pretzel Cookies

52 Weeks of Cookies:  Week 41


I've been thinking about putting pretzels in my cookies for a while now... so I did a quick Google search and came across these lovely little numbers from My Recipes.

I didn't change anything about the recipe but I failed to read the part where it said to bake it for 10 minutes if you want a soft cookie and 14 for a crisp cookie... so mine turned out to be the crisp kind which isn't terrible.... they are just a little hard to bite into (but they are not burnt so they still taste fine).

I also wasn't sure how coarsly to chop my pretzels (or what that really meant anyways) so I just dumped them into a ziplock bag and rolled a rolling pin over them for a bit.  There were small pieces there were large pieces I didn't much care.

I also failed to read the part where it said to let the cookies cool completely before eating... and I usually eat one nearly as soon as it comes out of the oven because that is usually when a cookie is in its prime.  Not these ones.  The oven does something to the pretzels that makes them weird when they are still warmed.  I was actually a little concerned that these would be another batch of no good cookies.. but don't worry... I had many more in the next couple of days which were much better.
I give these... 8/10.  They are pretty good but I think a regular chocolate chip cookie is probably still better.

Nutella Cookies

52 Weeks of Cookies:  Week 40


This isn't my first attempt at using Nutella in cookies.  You can find my first attempt at some Nutella White Chocolate Chip Cookies here.  But today we are on to bigger and better things (except I don't actually think these cookies were bigger... please notice how I'm not mentioning anything about whether they are better... foreshadowing?).  You can find the recipe that I used on Kirbies Cravings what really drew me into these was 2 things.

1) it said they only used 4 ingredients... and they were super easy to make because of this!
2) it was one of the first recipes that came up when I put "Nutella Cookie Recipe" into Google.

These ones won't disappoint folks.  I followed the recipe exactly... except it says it will make about 13 cookies and I halved the recipe and got 12... but I tend to make my cookies on the smaller side anyways (now you can eat 3 cookies and only feel the guilt of one!... or you know... not feel guilty about eating cookies... whichever).


I give these cookies a 10/10.  They were nice and chewy and tasty just like the title of the original recipe post said they would be.  Word of warning though... I tend not to read things once I've got the cookies in the oven and tried to remove them from the pan straight away... which ended up ruining one cookie into a pile of cookie pieces because it was so soft... it does say to let them cool on the pan... so just let them cool on the pan.  For those of you wondering... when I left them for like an hour and came back to them to put them away they came off perfectly.

Last week (which was really just a couple of days ago because I was so delayed with my post) I made some Oatmeal Chocolate Cranberry Cookies that were pretty good!

Oatmeal Chocolate Cranberry Cookies

52 Weeks of Cookies:  Week 39


I know, I know... I'm pretty behind on this one.  I would use the excuse that it's Spring Break BUT... I Haven't really had many plans for this week.

A few weeks ago I posted about making Cranberry Pecan Oatmeal Cookies.  These ones are similar... but if you aren't a huge fan of the orange or the pecan you might prefer the ones from this week.

Anyways, I found this recipe on the back of my bag of Craisin's but if you don't currently have a bag and want to know the recipe you can follow this link.

I changed 2 things with the recipe.

The first being that on the bag it says I could use white chocolate chips OR semi sweet... I went with the semi sweet ones just because I'm not a huge fan of white chocolate.

The second was that I thought the mixture looked too goopy to shape into balls for the cookies (and I've had this issue multiple times already with other recipes so I wasn't about to have it again)... my solution was to add extra flour.  I'm not sure how much more I added but it wasn't a whole lot.


I'm giving these ones an 8/10,  In the future I think what I might do is use the dough recipe from the Cranberry Pecan Oatmeal Cookies and the cranberry and chocolate ingredients from this one.  Those, I believe would be some pretty scrumptious cookies.

Last week I made some Chocolate Chocolate Chip Cookies that were also pretty scrumptious.

Chocolate Chocolate Chip Cookies

52 Weeks of Cookies:  Week 38


Yes, that's right... there are two forms of chocolate in these cookies (and no that is not a typo when I write chocolate twice).

I've made these before... they come from a recipe I wrote down many moons ago and so I'm not sure where it comes from.  Perhaps you know, if you do feel free to link it in the comments because I certainly did not invent this one!

Ingredients:

1 cup butter
1 1/2 cups white sugar
2 eggs
2 tsp vanilla extract
2 cups flour
2/3 cup cocoa powder
3/4 tsp baking soda
1/4 tsp salt
2 cups semisweet chocolate chips

Directions:

Preheat oven to 350 degrees

In a large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy.  Combine flour, cocoa, baking soda, and salt.  Stir into butter mixture until well blended.  Mix in chocolate chips.  Drop rounded teaspoon sized balls onto ungreased cookie sheets and bake for 8-10 minutes.

Makes 4 dozen cookies

Enjoy!

These ones are good... you'll enjoy them if you enjoy chocolate.  If you don't enjoy chocolate this much then I would recommend using something other than the chocolate chips..,. peanut butter or mint ones would be delicious too I think!

I'm giving them a 9/10... only because I'm not a huge fan of so much chocolate BUT I can still appreciate that this is a pretty good cookie... so good that I'll be sharing them with my life group tomorrow!

Banana Cookies

52 Weeks of Cookies: Week 37


Confession:  If I had to pick my favourite fruit it would likely be bananas.  If this banana shortage I keep hearing about is true I'm not going to be happy.  I'll be even less happy if bananas really are going extinct.

This isn't my first time making some banana cookies (you might recall my Banana Chocolate Chip Cookies which by the by I gave a 10/10... a little foreshadowing for you perhaps).

But I digress...

You can find the recipe on Cookies and Cups (and you should definitely ignore the comment that says they are horrible).

I really can't keep this to myself much longer... these cookies were SO GOOD!... I must confess that I often only make half a recipe because I don't want to be loaded down with all these cookies.  These ones I hummed and hawed over whether to half the recipe or not but I had 2 bananas that needed to either get frozen or used up so I made a full recipe... and I definitely do not regret it!

I didn't change a single thing about the recipe.  However, I did notice that in the frosting it calls for salt to be added but then in the instructions it never gets you to add it.  Naturally, I forgot to add it then but I imagine a good time to add it might be after you frost the cookies... just sprinkle a little on top?  

I'm not sure how the baker on Cookies and Cups managed to make hers so uniform... must be something that special cookie scooper does... I didn't have one so I used a teaspoon (because Confession... I always use a teaspoon as my cookie scooper).

Anyways, these are my unfrosted cookies... I tasted one that wasn't frosted and was skeptical if the frosting would improve on their quality... they were already SO GOOD.  So, if you don't want to add the frosting I think that's ok.  It will be like a banana load in cookie form!

Remember how I said that telling you about the other Banana Cookies I made and how I gave them 10/10 could be some foreshadowing?  Well... it definitely was.  There is no other score I could give these other than a 10/10... unless it was higher than that... like 100/10.  But let's not get too crazy.

Nutella White Chocolate Chip Cookies

52 Weeks of Cookies:  Week 36

Sorry for the delay in posting this... would you believe that I actually made these cookies on Friday?  Didn't think so...

I went out and bought some Nutella for some hazelnut-y tasting cookies.  You can find the recipe I used for these cookies here.

The only thing I altered in this recipe was that I let the dough sit in the fridge for a couple of hours before baking them.

The outcome?  They are fine cookies (I'm not a HUGE fan of white chocolate and actually found there to be too many chocolate chips in general in the dough... there were a bunch leftover in the bottom of the bowl after I finished making the cookies).  Anyways, there is a but with that statement and that is this... I can't tell that there is Nutella in them!  It's a real disappointment actually.  Sometimes, if I concentrate really hard on trying to taste the Nutella flavour a little bit comes through... but most of the time... nothing (and I think it might have to do with 1) there being so many chocolate chips and 2) there not being enough Nutella!).



Anywho, I think there is room for improvement on this one... I'll try another Nutella cookie recipe in the future and give this one a 7/10
